• The Vintage Port Rozès 2005 must be served:
- chilled, between 10° and 14°,
- in a wine glass.
The coolness concentrates the aromas that are released most readily in a large glass.

The pairings
• ROZES Vintage Port 2005, with its incomparable aromas of black cherries, must be enjoyed chilled if it is to reveal its full finesse and fruitiness. It is a delightful companion for foie gas in a cloth, Serrano ham, vegetables marinated à la romaine, scampis in tempura, Venetian veal liver, Mont d’Or vacherin cheese, fruity desserts and, of course, a moelleux au chocolat adorned with a strawberry coulis or crème anglaise. All the ingredients to counter any unlikely indifference to this aromatic festival.

Tasting Notes
Eye:
• Its beautiful dark red colour with slightly purplish nuances simply testifies to a wine from a vineyard bathed in hot, intense sunshine for many months. But
it is also proof that the wine’s fresh fruit character has not been troubled by any oxidation. If there is an underlying opaqueness behind this rich colour, then
this is completely normal as a wine like this one simply has to age in the bottle. It would be nonsensical to deprive it of all these organic materials which are the true precursors and drivers of its development..

Nose:
• The nose of this wine opens onto a wonderful world where the red fruits –
cherries and mulberries - are combined with notes of brown tobacco enhanced by some spicy flourishes. A certain fleshiness – the harbinger of its strength – comes into play unleashing all its richness in an understated fashion..

Palate:
• This delicate, velvety sensation is confirmed by full softness and a smoothness
that points to a great Porto vintage. It is straight, with no trace of artifice, frank and self-assured. All the heat it soaked up during these long sun-drenched days is present today in our glass which, in turn, unfolds in our mouths. You have the feeling that the glass contains a concentrated salad of red berries, nectarines and dark-red plums, all this accompanied by a chocolate fondant cake that unleashes the full extent of its softness and very slightly bitter tannin flourishes.
