Founded in 2007 by Ichiro Akuto, grandson of the founder of the Hanyu distillery, Chichibu has been in business since February 2008. Consisting of two stills made to order in Scotland by Forsyth's, it is not only the first Japanese single malt distillery since Hakushu, but it was also the smallest and most confidential. Beginning with the sale in 2008 of several very young whiskey cuvées, the "newborn" range, Ichiro offered, from Whiskey Live Paris 2011, his first "real" whiskey, a three-year-old cask brut. Today the distillery bottles its own whiskeys up to 12 years old for its Chichibu and Ichiro's Malt range. The distillery also houses the last stocks of Karuizawa, Kawasaki and Hanyu.

While the origins of the single malts that make up this gourmet vatted are not officially revealed, they probably come, like Double Distilleries, from Hanyu and Chichibu. Bottled without chill filtration, this pure malt has, as its name suggests, been matured in mizunara casks, the famous Japanese oak. The specific influence of this precious wood is obvious: tasting it, saturated with complex, spicy, woody aromas, is an invitation to stroll through the forest. The golden-bronze color of this whisky is a perfect match for its gourmet, pastry-like profile.
Profile
Nose : gourmand. Amandine (almond tart), tarte tatin and dried apricots. A hint of peat (lightly camphorated, licorice-like), followed by spices (green pepper), soil strewn with pine needles, cucumber peel (yes, it is!) and more spices (mild curry). Palate : lively, spicy! (green pepper, Espelette pepper), the mizunara has been there. As if to soothe the explosion on the palate, the fruit takes over, but cooked: baked figs, red fruit coulis and roasted peach. The wine stays cooked with a reduction of meat juice (veal stock). A hint of licorice stick. Overall : moderate in comparison with the attack, but the spices are still present, though less pronounced. Concludes with candied apricot and a slight bitterness that's not at all unpleasant.
