Founded in 2007 by Ichiro Akuto, grandson of the founder of the Hanyu distillery, the Japanese single malt whiskey Chichibu is already well known to whiskey lovers. The distillery is not only the first Japanese single malt distillery since Hakushu, but also the smallest and most confidential. It also stores and manages the bottling of the last barrels of the Hany. distillery closed in 2000, and of the Kawasaki and Karuizawa distilleries.Chichibu is established in a small town of the same name and nestled in the mountains of Saitama Prefecture, northwest of Tokyo. This mountainous climate is extremely conducive to accelerated maturation of whiskeys. Below zero degrees in winter and being able to exceed 35 degrees in summer, the angels' share is often twice as high as in Scotland and thus gives the whiskey an astonishing complexity despite its young age.On the production side, fermentation takes place in Japanese oak vats: the mizunara. This Japanese oak is rare and the Chichibu fermentation system is unique in the world. Indeed, it is not easy to obtain staves of this size but it is the assurance of unparalleled richness and depth for whiskey. The distillation is carried out in two small stills of 2000 liters made to order in Scotland by Forsyth's.Thanks to the efforts of its creator, Ichiro Akuto, Chichibu is on its way to becoming the very first 100% Japanese whiskey and inevitably one of the most promising distilleries in the archipelago.

Known for some time now for his blends of malts (Mizunara Wood Reserve, Ginkgo, Double Distilleries), this is the first time that Ichiro has sold his blends outside of Japan. Bottled at 46.5%, without cold filtration, it is a young and suave whiskey but also rich and full of character, which clearly demonstrates the talents of its creator.Profile: Fresh, fruity. Honey, herbs, saffron.Nose: Fruity with notes of peach, apricot, citrus zest and bananas. A nice sweetness stands out on notes of malt, caramel and vanilla creme brulee.Taste: Delicately cereal with hints of barley malt coated with toffee and honey. Spicy and fresh with gingerbread, black pepper, nutmeg, saffron, pipe tobacco and freshly cut hay. Gourmet on tropical fruits.Overall: Balanced and fine with vanilla and tropical fruits.
