Founded in 2007 by Ichiro Akuto, grandson of the founder of the Hanyu distillery, the Japanese single malt whiskey Chichibu is already well known to whiskey lovers. The distillery is not only the first Japanese single malt distillery since Hakushu, but also the smallest and most confidential. It also stores and manages the bottling of the last barrels of the Hany. distillery closed in 2000, and of the Kawasaki and Karuizawa distilleries.Chichibu is established in a small town of the same name and nestled in the mountains of Saitama Prefecture, northwest of Tokyo. This mountainous climate is extremely conducive to accelerated maturation of whiskeys. Below zero degrees in winter and being able to exceed 35 degrees in summer, the angels' share is often twice as high as in Scotland and thus gives the whiskey an astonishing complexity despite its young age.On the production side, fermentation takes place in Japanese oak vats: the mizunara. This Japanese oak is rare and the Chichibu fermentation system is unique in the world.
