Founded in 2007 by Ichiro Akuto, grandson of the founder of the Hanyu distillery, Chichibu has been in business since February 2008. Consisting of two stills made to order in Scotland by Forsyth's, it is not only the first Japanese single malt distillery since Hakushu, but it was also the smallest and most confidential. Beginning with the sale in 2008 of several very young whiskey cuvées, the "newborn" range, Ichiro offered, from Whiskey Live Paris 2011, his first "real" whiskey, a three-year-old cask brut. Today the distillery bottles its own whiskeys up to 12 years old for its Chichibu and Ichiro's Malt range. The distillery also houses the last stocks of Karuizawa, Kawasaki and Hanyu.

Created from a blend of casks from the distilleries of Hanyu and Chichibu, Ichiro’s Malt Double Distilleries is a pure malt that marries sweetness and firmness. The sweetness is inherited in part from the maturation in Japanese oak casks. Its firmness comes from the ex- sherry hogsheads used at Hanyu.

Nose : seductive, fresh and enthralling. Fragrant. Evokes the sweetness of malted barley and jasmine, enhanced by a fine note of pepper and vanilla. Juicy. Apricot, orange and mango nectar livened up with citrus fruit zest. Mentholated freshness. Pine tree, cedar, freshly cut wood. Green tea ice cream and sesame seeds. Incredibly floral with roses and violets. Palate : lively, loses nothing of its malted heritage. With woody softness, oak acts as a watermark. Launches with subtle roasted, chocolate notes. A luxuriant note of tangerine and exotic fruit surreptitiously dominates the palate, giving way to dried fruits that are still green on the tree (hazelnut, walnut).
